Serves 4
Ingredients
4 5oz fillet of Hake
2 tbsp of olive oil
1 tbsp of sea salt
1/2 tsp of freshly milled black pepper
For the Salsa
4 tomatoes
1 red onion
1 lime
1 red chilli
2 tbsp of freshly chopped coriander
Salt and pepper
2 tbsp of olive oil
2 tbsp of Lemon gin
8 small tortilla wraps
Here’s how
Finely dice the red onion and place in to a bowl, then add the juice of a lime to make the onions nice and tangy.
Cut the tomatoes into quarters and remove the seeds, then dice into small cubes and add to the onions.
Add the chopped red chilli and coriander.
Finally add the lemon gin and olive oil to make a nice fresh salsa.
Pat the fish dry with a piece of kitchen roll, then season with olive oil, salt and pepper.
Place the fish skin side down into a pre heated non stick pan and cook for 5-6 minutes on the skin side.
Turn the fish over and cook for 2 minutes before turning off the heat and leaving the fish to rest.
To serve fill the tortilla wraps with salsa and top with the fish.
